Honey Sourdough Chocolate Chip Cookies

Ingredients
  

  • 1 1/4 cups salted butter
  • 1 cup sugar
  • 1 1/4 cups brown sugar
  • 1/3 cup sourdough discard
  • 2 large eggs
  • 3 tsp vanilla
  • 3 1/2 cups kamut flour or 3 1/2- 3 3/4 cup All- purpose flour
  • 1 1/4 tsp baking soda
  • 1 1/4 tsp baking powder
  • 2 tsp salt coarse offers a nice texture
  • 3 cups semi sweet chocolate chips milk or dark
  • Finishing salt for sprinkling

Method
 

  1. Cream butter, sugars and discard for 5 minutes
  2. Add eggs and vanilla and set aside
  3. Whisk together flour, baking soda, baking powder, and salt in a separate bowl
  4. Add dry ingredients to the butter mix- mix well
  5. Add in chocolate chips
  6. Thoroughly combine
  7. Chill for at least 4 hours in the fridge
  8. Preheat the oven to 350 degrees F.
  9. Spoon out the dough (1-2 TBSP) and roll into balls before placing on the pan
  10. Gently press down with fingers
  11. Optional--Sprinkle with finishing salt
  12. Bake for 8-10 minutes

Please note the nutrition facts could change depending on the sugar, flour, chocolate chips etc you choose to use
We sub 1:1 honey for sugar and the cookies are incredible 
You can use Einkorn flour as well for the same measurements as Kamut
If using honey I have found that its best to bake 16mins at 350 degrees F-- this could change depending on how your oven cooks
